light vegetable cooking oil
A deep fryer
1 kg flour
150 g Crisco
1 tablespoon sugar
1 teaspoon instant coffee
2 eggs
red wine vinegar
1 egg white
These are delicious when homemade and you will never enjoy the store baked ones as much after tasting the homemade ones. Bamboo canes are difficult to purchase especially since they are fast disappearing from Italy too. You may purchase metal ones from Italian stores specializing in Italian cookware. There are various sizes of canes available. Don’t choose the large ones since this dessert is very rich.
Mix all ingredients except red wine vinegar, then add as much red wine vinegar needed to hold the mixture together into a ball that can be rolled.
Separate the dough into 5 or 6 balls.
Use a rolling pin to roll the balls into a fine 3 mm thickness.
Cut oval rounds of about 10 cm lengths from the dough.
Beat egg white with a fork.
Roll the rounds around bamboo canes and press middle with a bit of the egg white to join ends together.
Fry the bamboo canes with dough around them in hot oil until golden. Remove bamboo canes from the cannoli when cooled.
Store in a large pot in a cool dry place until ready to be filled.
